Four Seasons Hotel Singapore has just unveiled their new botanical dining experience at [email protected] Set in a cool sheltered terrace, this garden restaurant is an extension of their One-Ninety Bar.
While dining in this nature escape, you might be reminded of Singapore Botanic Gardens, and that's because the restaurant design is inspired by the UNESCO World Heritage Site.
The menu by Chef de Cuisine Pierre Barusta focuses on market-fresh produce. Highlights include a seasonal seafood tower for two ($148), lobster roll with lime crème fraîche ($24), char-grilled grain fed MB4 T-bone steak "Fiorentina" ($134) and Scottish salmon ($42).
Complementing the garden aesthetic is a wide selection of creative plant-based cuisine. These include signatures such as Vietnamese summer rolls with green mango ($15), papaya and avocado, garden burger with chickpea patty ($34), and vanilla-soy panna cotta with homemade coconut ice cream ($15).
Bar Manager Gabriel Carlos will be conjuring up botanical cocktails ($25 - $29), zero-proof cocktails ($18) and punch bowls ($158). If you're not in the mood for cocktails, go for wine by the glass ($18 - $36) or craft beer on tap ($15).
To celebrate its opening, the restaurant will be serving diners complimentary char-grilled meats and plant-based skewers grilled a la minute with any beverage purchased from now till 31 July 2021, from 5.30 to 7.30 pm.
