New Pink Patisserie At Queenstown Has Pretty Floral Jelly Cheesecakes That Look Like Works Of Art
While minimalist Korean-style cakes are trending hard right now, jelly cakes are also getting real popular, for their creative designs of florals and even Sanrio characters. Though most of these “cakes” come purely as flavoured agar, there’s a new patisserie in Singapore that has taken this fad up a notch by layering it with cheesecake.
Enter Petals by Victoria.H, a brick-and-mortar establishment with the most gorgeous, intricate floral jelly cheesecakes that look like works of art.

If Victoria Hay, owner of Petals by Victoria.H looks familiar to you, that’s probably because she went viral a couple of years back for being that “chio policewoman” who made cameo appearances on local drama Crimewatch.

She’s since hung up her Singapore Police Force uniform and traded it for a baker’s apron, after taking the plunge to run her previously home-based jelly cake business full-time with a new physical storefront - sporting a lovely pink-and-white exterior accented with gold.

Good looks of both Victoria and her shop’s facade aside, we’re floored by her baking chops and design skills that have given her creations such a name. One look and you’ll know that these are not your regular jelly cakes, for the flower patterns - made using milk and hand-injected using a syringe and needle - are more life-like and elegant than your regular variety. In fact, the jelly is made using gelatin instead of the usual agar or konnyaku, bringing a melt-in-the-mouth experience.

The colour choices are also on-point, with everything vibrant and multi-hued but not overly so. This gives them a more “high-end” appearance compared to the many others out there which come in neon shades. And instead of the typical large roses, peonies, and lotus flowers, Victoria has taken on the challenge of offering a much wider range of designs, including sunflowers, daisies, and fluttery hydrangeas.

Their flagship item is their whole cake, which they’ve dubbed the Cheesecake Bouquet (from $50 for 4”) - a lemon cheesecake with a buttery crumb base, topped with fruit jelly. Also popular are their Floral Petite Domes (from $50 for 4), which are miniature versions of the aforementioned that are suitable for gifting or consuming in smaller quantities.

At present, there are around 18 pre-set floral designs, but if you’d like to get something customised for a special occasion, you can try making a pre-order request. Floral letter cakes with the recipient’s initial are also possible. Customisation fees may apply depending on complexity.

Aside from these mainstays are also monthly specials in different flavours. August 2021’s is a chocolate cheesecake with Oreo cookie crust and chocolate ganache frosting, topped with a dainty chocolate daisy. We’re looking forward to finding out what’s in store for future months!

Do note that Petals by Victoria.H is not a sit-down cafe, and only operates for deliveries, takeaways, and self-collection at the moment. However, Victoria does conduct in-house floral jelly cheesecake workshops for those who’d like to learn how to make these themselves.
