Call it a late breakfast or brunch, it's arguably the superior meal. Whether you're planning a catch-up session with the besties, a romantic date or a family-friendly weekend meal, a bougie brunch is the way to go. Everyone anticipates a substantial serving with any food platter, so it says something that the Madison's Brunch Platter at Pullman Singapore Hill Street would make your jaws drop. A foodie's dream come true, it overflows with brunch favourites that hit the spot in not just in sheer quantity but also quality.

At its centre is a platter-ception, an elevated Artisanal Cheese and Charcuterie Platter featuring Camembert, Parmesan, Goat's Cheese and assorted juicy meats on skewers. Surrounding it are refreshing Manhattan Chopped Salad, addictive Sweet Potato Fries and Mac & Cheese in a bucket, and piquant laksa Tiger Prawns and mushrooms. And that's only just the beginning.

Tuck into silky Egg's Benedict with smoked salmon, a sweet, Japanese-inspired MFC Fried Chicken on waffles, juicy Mb3 Black Angus steak and sausages. Saving the best for last, you'll have the signature Reuben! Reuben! Sandwich. It has a generous filling of succulent corned beef slices, sauerkraut, Emmental cheese, dill relish and Pullman's Reuben Dressing between toasted seeded wheat bread. #3 Breakfast at Republic, The Ritz-Carlton, Millenia Singapore

A swanky bar by night, Republic at The Ritz-Carlton is just as stunning in the daytime. The grand dining hall is drenched in soft natural light through the high, domed glass ceiling. It's furnished with plush seats you'll sink right into and decorated with museum-worthy art and chandeliers.

It's such a lovely place to luxuriate in that it almost doesn't matter what the food is like, although it's good news that the new breakfast menu more than measures up to the ambience! On the menu are Western-style mains like Truffle Croque Madame ($28) and Avocado Sourdough Toast (from $18) as well as Asian breakfast dishes like Fish Millet Congee ($26). When in doubt, you can go wrong with the Classic Breakfast Platter ($36). This scrumptious platter comes with sourdough toast, smoked sausage, bacon, baked tomato, hash brown, sautéed mushrooms, salad and a cage-free egg that's perfectly soft-scrambled or in your preferred choice of cooking.

If you prefer something sweet, choose from Republic Pancakes ($22) or Caramelised Brioche French Toast ($22). The latter has a soft and buttery texture reminiscent of bread pudding, and its rich nutty flavour is balanced with a tangy berry compôte.

To feel thoroughly pampered, opt for the 4-course Republic's Breakfast Set ($42++). It includes your choice of main course, a Greek yogurt parfait, a juice or smoothie, and a hot beverage. The Greek Yoghurt Parfait ($18, a la carte) alone makes the Breakfast Set the clear superior choice. This decadent and artfully assembled parfait has chia seed, berry compôte, granola, flower-infused honey and a honeycomb-shaped cookie on top of creamy yoghurt.

Republic's breakfast menu is available from 8 to 11:30am, with last orders at 11am. Make your reservation here.

#4 All-Day Breakfast at Common Man Coffee Roasters

OG brunch cafe Common Man Coffee Roasters (CMCR) has just revamped its menu with new breakfast dishes and all-day classics.

The extensive breakfast line-up just got even bigger with two additions. First is the Breakfast Pancakes ($26) which has fluffy pancakes topped with creamy chilli scrambled eggs, thicc bacon slices and a side of rich and earthy maple butter syrup. Craving something with more protein? Try the Ribeye Steak & Eggs ($36) which comes with grass-fed ribeye steak, two fried eggs, herbed king oyster mushroom and green peppercorn sauce.

If you're ordering dishes to share, the classic Common Man Full Breakfast ($30) is a must. This all-time favourite comes with the whole shebang including eggs in any style, bacon, sausage, tomato, hashbrowns, portobello mushrooms, baked beans and toast.

Newcomers on the all-day menu, available from 10am to 9pm, include the King Prawn Mac & Cheese ($28). Now, this mac & cheese is not like other mac & cheeses, in fact, it might be the best one we've tried by a mile. It's made with parmigiano-reggiano, red cheddar, bechamel sauce, sautéed kale, sourdough crumbs, and topped with pan-seared king prawns. Another comfort food is the new Rainbow Rice Bowl ($24) that comes with organic brown rice, poached egg, pineapple kimchi, sweet potato chips, daikon & red shiso cress, gremolata and crispy buckwheat. Toss them together like you would with a bibimbap and enjoy crunchy, flavour-packed bites.

The All-Day Breakfast menu is served from 7:30am to 4pm. CMCR has five cafes in Singapore. Check out the locations here.

#5 All-Day Brunch at Rise Bakehouse

Best known for delicious cakes that are too pretty to eat, Rise Bakehouse has expanded its menu to include new and revamped savoury dishes.

The Rise Breakfast Waffles ($20.90) is now bigger and better but still well-priced. Simple yet satisfying, it comes with brown butter waffles, chicken bratwurst, sautéed mushrooms, fruit salad and eggs done your way.

The menu also has new all-day classics including pastas like the Scallop Rosé Rigatoni ($21.90). An elevated version of the TikTok-viral gochujang paste, this dish has rigatoni smothered in rich gochujang cream sauce that packs a fiery punch. It's then topped with sweet seared scallops.

For the month of August, Rise Bakehouse is serving a special National Day drink menu featuring local-inspired flavours. It includes two delicious drinks that we wish were permanent menu items: Kaya Cloud Martini ($10), a cold brew with pandan-infused sweet cream, gula melaka and toasted coconut, and Yuan Yang Muah Chee Cream Latte ($9) with black sesame, peanut sweet cream and a mochi skewer.

Rise Bakehouse is located at TripleOne Somerset #01-05 and 148 Potong Pasir Ave 1 #01-53.
