Most of us are well-acquainted with Taiwanese street food, but Taiwanese countryside cuisine is more of a mystique, and not to mention harder to find in Singapore... until now! Song Yue Taiwan Cuisine, a new restaurant at Leisure Park Kallang, serves up fine produce-driven dishes inspired by the wholesome and nourishing food in the Taiwanese countryside.

The 120-seater restaurant makes an impression right away with its zen stone garden-like entrance and pottery display. A pathway of rocks leads customers into the main dining area, which features a minimalist, traditional-meets-modern aesthetic. The interior is fitted with wood and stone elements, and decorated with Chinese paintings along with snazzy lighting fixtures.

Tea connoisseurs will have a fine time tasting the range of premium Taiwanese tea like the delectable Taiwan High-Mountain Tea ($5.90 per pax) that's smooth, fragrant, mellow and subtly sweet all at once.

All the teas are sourced directly from various small family tea farms across the island, then brewed by an in-house certified tea specialist. The restaurant also offers refreshing homemade chilled tea and fruit beverages.

On the food menu is a wide selection of comfort food that are elevated renditions of Taiwanese countryside cuisine from home-cooked family meals to banquet and special occasion dishes.

A highlight was the Traditional Ginger Duck ($19.90 for Regular | $36.90 for Medium), an earthy, nutty and invigorating stew with tender duck chunks. If you're typically not a fan of ginger, this soup could very well change your mind!

Another standout dish was the Pineapple Prawns with Crispy You-Tiao ($18.90) wok-tossed in a citrusy mayonnaise dressing. Crispy on the outside and juicy on the inside, the prawns were addictive yet unexpectedly eclipsed by the amazing homemade you tiao stuffed with hand-beaten squid and prawn paste.

Something that's sure to be crowd-pleaser is the Farm Chicken with Spring Onion ($18.90 for Half; $33.90 for Whole). It's similar to Samsui ginger chicken, but with a light and less-sweet Taiwanese soya sauce to let the natural chicken flavour take centre stage, and topped with a mountain of fresh spring onion and served with ginger dipping sauce.

The Salt and Pepper Pomfret with Crispy Garlic Chips ($35.90) is a must-order! This intriguing dish features a deboned pomfret that holds lightly battered deep-fried fish pieces with an excellent crunch and no greasiness. The seasoning is simple but delicious, just salt and pepper, and the fish is accompanied with deep-fried garlic chips.

If you can't go without carbs, Ah-Ma's Rice Vermicelli and Taro Soup ($19.90 for Regular | $32.90 for Medium) with pork, dried shrimp, lala or clams, shiitake mushrooms and taro in a pork bone broth, or the smoky and flavour-packed Cabbage and Hokkaido Scallop Stone Pot Rice ($19.90 for Regular | $32.90 for Medium).

Prefer plain ol' rice? You're also in for a delicious time as Song Yue Taiwan Cuisine uses top-notch Grade 1 short-grained rice harvested in Tai Chung, and this premium status shows in its taste. The fluffy, short-grained rice is reminiscent of Japanese rice, but more lightly sticky and chewy in texture, and has an aromatic sweet aftertaste.

Finally, you can expect traditional homemade desserts to round off your meal. We enjoyed the refreshing Chilled Oolong Ai-Yu Jelly with Green Lemon ($6.90), which is plant-based ai yu jelly popular in Taiwan.
