A chocolate that is naturally pink? Chocolate is now not only a natural vegetable alternative(Cocoa Beans), it is also naturally instagrammable.  Hmmmmmm....

Besides the usual dark, milk and white, ruby chocolate is now the 4th natural chocolate color. niceee!

More than 80 years ago, Nestlé excitedly announced that they found the first new natural colour for chocolate: White. No luck these 80 years until Barry Callebaut, the world's largest cocoa processor discovered pink cocoa beans.

Perfectly made for the millenials. How timely.

According to Barry Callebaut's news release, the cocoa beans are sourced from different regions of the world, including Brazil, Ecuador and the Ivory Coast.

 “It's natural, it's colorful, it's hedonistic, there's an indulgence aspect to it, but it keeps the authenticity of chocolate. It has a nice balance that speaks a lot to millennials,” said Antoine de Saint-Affrique, CEO of Barry Callebaut AG.

The potential of the bean was discovered more than 13 years ago. It was a long arduous process of discovery behind this new craze.

According to New York Times, they described the taste as a "tension between berry-fruitiness and luscious smoothness, unlike dark or milk chocolate, it's not bitter, milky, or sweet. It is just fruity."

It looks yummy but also incredibly artificial...

On the other hand, skepticals have described this discover as a 'marketing hype'.

“We don't yet know what Callebaut means by the 'ruby cocoa bean,' especially since no expert I've ever spoken to has mentioned a unique type of bean that comes from the Ivory Coast, Ecuador, and Brazil,” says Megan Giller, author of the new book Bean-to-Bar Chocolate: America's Craft Chocolate Revolution

Where to get?
It's not commonly available worldwide yet. We do know that Nestlé jumped onto the hype and launch the pink Kit Kat Ruby Cocoa Beans in Korea and Japan.
