After four years at Martin Road, PS.Cafe Group's stylish Japanese restaurant Jypsy has settled into its new home and first standalone location at One Fullerton.

Ambience at Jypsy One Fullerton

Sporting the same distinctive lanterns forming a canopy over the indoor dining space, Jyspy exudes an effortless cool with a wabi sabi-meets-bohemian chic aesthetic.

The interior design takes inspiration from the Japanese archipelago and its island coastlines. Floor to ceiling windows flood the space with natural light, while the sun-weathered woods, hand-stained fabrics and soothing colour palette creates a cosy and relaxed, yet undeniably snazzy ambience.

The restaurant also has little nooks for a more intimate dining experience or private events.

As stylish as the indoor area is, the most coveted seats are at the outdoor dining area. The large, breezy alfresco space has the same Japanese-inspired and rustic style with hanging lanterns and pops of indigo. All this is set against a backdrop of the stunning Marina Bay vista.

These are also prime seats for a glorious view of the kaleidoscopic light and water show performed at 8pm and 9pm daily at Marina Bay Sands.

Food at Jypsy One Fullerton

Regulars at Jypsy will be glad to see their favourites like the Nest of Fries ($14) and Wagyu Beef Dripping Fried Rice ($26) on the menu. A must-try for first-timers are the Jypsy Salmon Tacos ($16), a creative spin on tacos with a fried seaweed shell stuffed with salmon, a rich and creamy avocado & tomato salsa, ikura and wasabi mayo for a little kick.

They're joined by new additions that have the same fusion of Mediterranean and Japanese influences that the brand is known for.

New dishes include the Ceviche Snapper Al Limone Spaghettini ($24), a light and zesty dish with lemon dashi sauce, jalapeno, lemon skin and oba leaf, and the Jypsy Fish & Chips ($24) that's served with a fiery wasabi tartar. Meat lovers can go for the Robata Lamb Ribs ($28) with mint, shiso and garlice verde for dipping.

There are also Charcoal Tsukune Sticks ($11 - $15) - perfect for sharing. These skewers come with a chunky serving of prawn, chicken, beef or pork grilled smothered in sauces like green ponzu and chipotle glaze.

One of the standouts is the Jypsy Tongue & Cheek ($26), which has a comforting home-cooked taste with an elevated touch, featuring tender beef slices sitting atop smooth, creamy mashed potatoes lightly imbued with the fresh tingle of wasabi.

There's also an array of sushi and sashimi dishes like the Bluefin & Chitose Crudo ($25) with semi-dried tomatoes and hot basil ponzu.

Don't get too carried away with your orders from the savouries as you'll want to leave some space for dessert.

Jypsy's Rhumbaba & Raisin Soft Serve ($12) was an absolute delight with its refreshing flavours and crunchy cookie crisps. Another one worth trying is the Yuzu Tofu Cheesecake ($10), a curious little thing that has the wobbly and uber soft texture of tofu with the rich cheesy taste of a New York cheesecake, along with a tangy yuzu and buttery biscuit base.

No friends night out or romantic date is complete without some well-crafted drinks, and Jypsy has plenty to choose from. Its extensive beverage menu includes wine, beer, sake, sparkling drinks, coffees and creative cocktails like Jyspy Spritz ($19), a fresh and crisp thirst-quencher made with Prosecco, plum liqueur and grapefruit.
