One of the best things about having the mid-autumn festival come around is seeing adorable rabbit-themed items pop up everywhere. This time, Typhoon Cafe is kickstarting the season with their brand new White Rabbit Soufflé, which incorporates nostalgic, milk flavoured White Rabbit candy into a pancake dessert dish!

We visited Typhoon Cafe's Plaza Singapura branch to try it for ourselves and spotted a life-sized White Rabbit mascot waiting at the entrance! There are also nods to the homegrown brand's candy, nougat and ice cream variations as part of the display.

The White Rabbit Soufflé Pancake ($18.90) consists of a stack of jiggly and fluffy pancakes, topped with powdered sugar and meringue ‘rabbit ears’. Talk about perfect for the 'gram! This yummy soufflé tower is best eaten with the luscious White Rabbit ice cream, along with crunchy and fragrant vanilla crumble, crushed peanuts and dried orange on the side.

What's more, the Soufflé Pancakes cuts open to reveal a 'surprise' inside: more White Rabbit candy goodness! The soft and melty candies are added in between pancake layers, providing a pop of flavour and variation in texture.

While these Soufflé Pancakes can certainly be polished off by a solo diner, the serving size is generous enough that we'd recommend sharing it between three or four people, so you can have space for the other delicious dishes served at Typhoon Cafe.

Some of our favourites are the Double Boiled Chicken Collagen Soup ($12.80), a deliciously savoury broth with large and tender chicken pieces inside; the Panko Canadian Pork Chop with Egg Fried Rice ($14.80), a hearty and satisfying signature dish that fills up your belly; and the Steamed Yellow Croaker with Preserved Vegetables ($33.80), which gets you a mouthwatering platter with a whole steamed fish!

If that all sounds like a bun-neat idea to you, then grab your cafe-hopping besties and head down to Typhoon Cafe this month! This dessert is only available from 7th September to 30 September at all four Typhoon Cafe outlets in Singapore, located at Plaza Singapura, Bugis+, Kallang Wave Mall and i12 Katong.
