
The 'Heritage of Penang' Buffet Returns To Edge At Pan Pacific Singapore
The buffet spreads at Edge are always jaw-droppingly extensive and extravagant, but there's even more reason to indulge in the feast: the 'Heritage of Penang' buffet is back!
Available from now till 20 September 2026, the buffet is made in collaboration with four Penang hawker legends. Diners can look forward to a food marathon around "Penang" with a slew of authentic dishes that taste like they came straight out of the stalls of George Town.
After the Penang culinary journey, there's also more to enjoy from Edge's impressive selection of international buffet classics including roast meats, seafood on ice, cheeses, charcuterie and desserts.
Here are some highlights from the buffet:

Chef Toon Chin Hye, Founder and Head Chef of Ah Soon Fried Oyster, showcases his Fried Oyster Omelette that's brimming with wok hei. Meanwhile, Chef Tan Pow Lai, Master Artisan of Tan Kee Poh Piah, serves up Handmade Popiah made with delicate Popiah skins cooked and rolled onsite.

Chef Kim Chong brings the bold flavours of Peranakan cuisine to the spread with aromatic dishes like Nyonya Otah, Nyona Curry Kapitan, and Nyonya Perut Ikan.

Finally, Chef Chee Thiam's signature Apam Balik, also known as Min Jiang Kueh, is freshly made with crispy edges and fillings like peanut, durian, corn, and coconut.
And that's just the beginning! Chef Andy of Edge has also created a whole range of Penang dishes. Fill your plate up high with Five-spice Pork Rolls, Assam Pedas Fish with Lady Finger, Too Kar Chor (braised pork trotter with black vinegar), Inchi Kabin AKA Nyonya fried chicken, and more.

Complete your Penang-themed feast with comforting Herbal Bak Kut Teh, hearty Wok-fried Porridge with Crispy Pork Belly, and a refreshing Nyonya Mango Kerabu salad.

Over at the live station, grab a serving of Char Kway Teow, a signature of Edge that's smoky and subtly sweet. After that, get some noodles to share with your table; there's Chef Andy Oh’s Signature Penang White Curry Noodles, Penang Prawn Noodles, and Penang Assam Laksa.


If you're still going strong at this point, head for the DIY Penang Rojak station where you can choose your preferred ingredients and toss it up with rojak sauce.
After that, there's still the international buffet spread to enjoy. Make stomach space for the luxurious dishes like Osso Bucco, Pan-seared Sustainable Salmon with Fennel Purée, Seafood Bouillabaisse, Slow-roasted Prime Rib with Yorkshire Pudding, Chicken and Mushroom Roulade, and Marinated Giant Squid.
Don't miss the Steamed Oysters, Sashimi, Signature Salt-Baked Crab with chilli sauce and mantou, and the row of seafood on ice: Sustainable Boston Lobster, Snow Crab, Tiger Prawn, Pacific Clam, Half Shell Scallop, Sea Conch, Black Mussel, and Crawfish.

When you're ready for dessert, head to the Penang Chendol live station for a cold creamy treat, and get some sweet snacks like Penang Tau Sar Piah and Penang Peanut Candy.

There's Signature Durian Pandan Cake, Durian Pengat, Kueh Lapis, and Nyonya Kueh that fits the Penang theme. If you're craving Western sweets, go for the Nespresso Salted Coffee Caramel Tart, Signature Hazelnut Royaltine, and Bread and Butter Pudding.
The kids (and young at heart) can go wild at the Chocolate Fountain with dippers like fruit and marshmallows, or get a scoop of ice cream.
