Now, I’ll have to admit - I don’t particularly enjoy Japanese-style souffle pancakes and am more of an American pancake kinda gal. I once tried the ones at another highly-raved souffle pancake place hailing from Japan, and didn’t like how eggy and airy they were.

Nevertheless, I was tempted by the thought of sinking my teeth into real Japanese momo with the White Peach Kiseki Pancakes by FLIPPER’S, and decided to head down with an open mind.

Turns out, this was a great choice, because FLIPPER’S pancakes don’t seem to have any of that overly eggy flavour that I don’t fancy. Each pancake was made to fluffy perfection, but I didn’t feel like I was “eating air” - they had a nice bounce to them with enough substance, while being light enough to let the other components of the dish shine.

The ensemble is topped with fresh cream, fragrant peace sauce, and what was meant to be Haagen-Dazs’ peach ice cream.

Unfortunately, Haagen-Dazs recently stopped production of their peach ice cream, so FLIPPER’S improvised by using their berry ice cream instead. I found this to be a bit of a mismatch, as the berry flavour overpowered all the peachiness. Vanilla would have been a much better choice.

Instead of mixing everything together, I had the pancakes with the ice cream, while I ate the peach on its own - which thankfully didn’t compromise my experience, because the airflown Yamanashi peaches are so intoxicatingly good that they’re worth savouring as is. Other than being super sweet, huge, and juicy, the peaches come with a special homemade peach jelly core, which provides extra flavour and texture.

At $28.80, the White Peach Kiseki Pancake is significantly pricier than FLIPPER’S other pancakes which are mostly in the low $20s range. But with Japanese fruits being relatively expensive, this is understandable. Portions are rather filling, so share this with a friend and split the cost to make it easier on the wallet!
